Turkey offers a lot of great places to see. All you need is the time to do so. Istanbul is of course the top of my list and is one of my favourite cities in the world.
Outside Istanbul Turkey also has a lot to offer. There are beautiful beaches lapped by beautiful blue sea, in places like Bodrum and Antalia, where you will find all kinds of accommodation depending what you want to spend. If you want fantastic service go to the Mandarín Hotel in Bodrum.
Take your time to go to incredible archeological sites like Ephesus. See natural beauty in places such as Pamukkale (cotton castle) and the magnificent Anatolia with its heritage, full of tradition. Go to Troy and Gallipoli, with their history.
I made a trip around 12 years ago with some German friends, it was a group of about 60 people on an tour organised by Bertelsmann (launching their tour company). The tour cost really very little and it was all in German, which was very good to refresh my Deutsch.
We visited all these nice places, plus Istanbul, and finished the trip on the beaches of Antalia. The trip was in a comfortable bus. We were able to see a lot of the country and during the drive the guide explained to us what we were going to see next. It was a very cultural trip. We saw a lot of beautiful places, in very good company, with my dear friends Richie and Inge. As a bonus my German improved significantly.
